Kana Salad Dressing

1 cup soy sauce1 cup rice vinegar½ cup sugar2 T sesame oil1 scallion, finely minced1 T toasted sesame seeds1 t chili powder
Wisk together the soy sauce and vinegar.
Slowly add the sugar, chili powder and oil, combining well.
Finely mince the scallion and let soak in the dressing while you toast the sesame seed in a dry skillet over medium heat. Keep an eye on these and make sure to toss occasionally. You are looking for them to just turn a light brown color. I find it helps to keep some untoasted ones near the stove so I can tell how "toasted" we are.
Stir in the sesame seeds. Drizzle this dressing over a mix of your favorite fresh greens. The fresher the better in this case. This dressing is very good with spinach and other more substantial salads.
Serving Size: Makes about 32 servings of 1 Tbsp
