Amazing Meatless Chili

3 c. cooked dry beans (red kidney, pinto or multi-blend mixture) - about 1 cup dry1 chopped large onion2 stalks celery, diced1 green pepper, chopped28 oz can stewed tomatoes2 Tbsp chili powder1.5 tsp oregano1.5 tsp cumin1.5 tsp basil1-3 cups water (to suit your own taste)1/4 cup fresh parsley or 2 Tbsp dry
If cooking beans, cover beans with water and soak overnight. OR bring beans to boil for 5 minutes, turn off and let sit on burner to cool and saok.
Rinse beans.
Cook beans in boiling water until soft.
Saute onion, garlic, celery, green pepper, and spices about 5 - 10 minutes. (I use a dribble of water rather than oil)
Stir in tomatoes, cover and simmer for 30 minutes.
Add cooked beans and parsley, water as needed and cover, simmering 10 minutes.
Add salt and seasoning as desired. (I used a hot chili powder with a real kick)
Serving Size: makes 8 hearty servings
