No Fat Baked Sweet Potato Chips

1 sweet potatodash sea saltdash black pepperA really good potato peeler
Pre-heat your oven to 200 degrees after you lines two racks with tin foil.
Peel your sweet potato or yam, discarding skin peels.
Now get a big bowl and keep peeling. Using the peeler, peel the sweet potato into super thin strips, try and keep them a bit wide across but paper thin. Peel until nothing's left. Take your chips-to-be and lay them on paper towels, patting away extra moisture. Lay them in single layer on the foil lined racks, sprinkling with salt and pepper if you want.
Bake at 200 for an hour, peek at them, move them around a bit, and then bake another 30 minutes (don't let them get brown in the middle). Then turn off the oven let them cool until crispy.
Eat!
