AB's Huevos Rancheros

Ingredients
2 large eggs1/4 c canned black beans, rinsed1/4 c diced tomatoes2T diced green pepper2T diced onion1 clove of garlic, chopped1t chili powder2T shredded cheese
Directions
Place chopped vegetables, chili powder and beans in a small pot. Stir to combine and allow to simmer until veggies are tender. Meanwhile, crack & place eggs in a microwave safe bowl. Cook for 1 minute, stir, cook for another 30-45 seconds. When the eggs are done, top with the bean mixture and cheese if desired. Serve.
