Black Bean and Sweet Potato Quesadilla

Ingredients
1/2 sweet potato, baked and mashed1/2 cup black beans, cooked1/4 cup onion, diced1 clove garlic, minced1 tsp. cumin2 Tbsp. mashed avocado (or guacamole)2 Tbsp. sour cream, reduced fat1/4 cup shredded cheddar cheese1/2 cup baby spinach leaves2 whole wheat tortillas, soft taco size
Directions
Makes 1 quesadilla = 2 servings

Saute onion and garlic (using nonstick cooking spray) until soft.
Add black beans, heat through. Stir in avocado, sour cream, cumin, and cheddar cheese; Cook until melted.
Spread mashed sweet potato over one tortilla. Top with baby spinach, then black bean mixture (don't overfill - you may have more than you need).
Top with second tortilla.
Heat a pan on high heat and spray with nonstick cooking spray. Brown quesadilla about one minute on each side.

Cut into wedges.
