olive oil, 1 T.leeks 4 C. choppedcelery 2.5 C. choppedceleriac root or turnips, chopped, 2 C.carrots, chopped, 3 C.potatoes, diced 2 C.water 12 c.chicken thigh skinless, 2 dicedchicken breast skinless, 1 dicedrosemary 1 T. freshlemon juice 1 T. freshsalt and pepper to taste
saute diced leeks in olive oil, add other veggies and cook until lightly browned, add chicken stock or water, add diced chicken, lemon, and rosemary and simmer for 40 minutes, do not boil. Salt and pepper to taste, makes about a gallon for freezing or eating up.
