Spinach Stars

2 - 10 oz pkg of frozen spinach, thawed & squeezed dry1/4 cup egg beaters1/4 cup thinly sliced green onion (optional)8 oz of cream cheese ( I use neutschatel style), softened1 cup water chestnuts, finely diced48 won ton wrappersgarlic to tasteCooking spray
Preheat oven to 400 degrees.
Spray mini muffin pans with cooking spray.
Insert 1 won ton wrapper into each hole - bake for 6 minutes or until lightly golden brown.
Meanwhile:
Mix the spinach, green onion, cream cheese, water chestnuts and garlic. Lightly beat the egg beaters and add to mixture to bind.
When won ton wrappers are lightly browned, add 1 tsp or so of the spinach mixture to each won ton wrapper. Bake for about 6 minutes or until bubbly. Let cool slightly and then remove and put on a wire rack to completely cool
The finished product will then resemble a star filled with spinach! Enjoy and your guests will enjoy also!
