Applesauce Bran Muffins

Ingredients
1c. sifted unbleached flour3 Tble. sugar2 tsp. baking powder1/2 tsp. soda1 c. All-Bran buds-crushed 2 well beaten eggs1 c. unsweetened applesauce1/4 c. skim milk2 Tble. canola oil
Directions
Put first 5 ingredients in a bowl and make a well in the middle of the dry ingredients. Add next 4 ingredients and mix only until batter is moistened. Put batter into 12 sprayed muffins tins. Bake at 400* for 15 to 20 minutes.

    I just made these and my 7 year old daughter is eating her second one!! I didn't have All Bran Buds so I crushed up Bran Flakes instead. I also added some vanilla and sprinkled cinnamon on top before baking. My oven is really hot so I had to adjust my temp. and time. We will make these again. - 5/9/11
