High Protein High Fiber Blueberry Pancakes

1/2 Cup Steel Cut Oats1/2 tsp. Cinnamon1 Packet PureVia (natural sweetener)1 tbsp. Flax Seeds1 tsp. Chia Seeds1/2 Cup Nonfat Cottage Cheese1 large Egg1/2 Cup Blueberries1/2 tsp. Extra Virgin Coconut Oil
Blend the following ingredients:
Steel Cut Oats
PureVia
Cinnamon
Flax Seeds
Chia Seeds
Add the remaining ingredients except the Coconut Oil and Blueberries, continue blending.
Stir in the Blueberries.
Coat the frying pan with coconut oil over low heat. Add 1/3 cup of batter per pancake. Cook until brown on both sides.
Serving Size: Makes (4) 4-inch pancakes.
