Low-carb Cheddar Souffle

1 T. butter4 oz. grated cheddar cheese7 large eggs4 oz. sour cream1/3 cup heavy cream1/2 cup onions1/4 cup mushrooms1/2 cup spinach1/4 t. nutmeg1/2 t. salt
Preheat oven to 350F.
Add half of butter to small pan and saute onions and mushrooms. Set aside. layer grated cheese on bottom of pam-sprayed casserole pan.
In mixer, combine remaining ingredients and mix on high for 4 minutes. Add sauted veggies. Pour over cheese and cook at 350F for 60 minutes. The souffle will collapse about a minute after removing from onen, so be ready to eat! Serves 6.
