Tabbouleh Salad

Ingredients
1/2 cup Bulgur1 cup water1 1/2 cup parsley, minced2 tsp dried mint2 Tbsp onion, finely chopped1 tomato, cut into 1/2" cubes1/3 cucumber (8 1/4"), chopped1/4 tsp coarse sea salt1/4 tsp ground black pepper1/4 tsp ground cumin1 1/2 Tbsp lemon juice (or one lime)1 tsp olive oil
Directions
Let the bulgur soak in 1 cup water for 30-60 minutes, until softened.

In a large bowl, gently toss together all ingredients but oil. Chill for one hour to blend the flavours.

Before serving, toss with the oil.
