Bread & No Butter Rhubarb Pudding

Ingredients
2 slices wholemeal bread100 ml skimmed milk2 eggs3 tspn splenda1 tspn sugar1 stalk of rhubarbdrop vanilla essencenutmeg
Directions
Boil the chopped rhubarb in a little water until softened and place in a shallow dish.

Add bread - sliced into triangles - and lay on top.

Mix egg, milk and vanilla essence

Pour over bread and rhubarb

Sprinkle with nutmeg and 1 tspn suger
