Cheesy Cauliflower Casserole

Ingredients
4 cups fresh cauliflower chopped1/2 cup greek yogurt6oz Cream cheese1/2 cup onion- minced1 cup milk1 cup shredded cheese (divided)Salt and Pepper to taste
Directions
Chop cauliflower into bite sized chunks and put into a large mixing bowl.

In a seperate bowl whisk together softened cream cheese (microwave it to make it very very soft) yogurt milk, minced onion salt pepper and half the shredded cheese

Pour over the cauliflower and stir to coat. Transfer this mix into a glass casserole dish, top with remaining cheese. Cover with foil

Bake in a preheated 400 degree oven for 1 hour, during the last 10 minutes remove foil cover to allow the top to brown.
