Moroccan Skillet Chicken

1 tbs olive oil1 lb boneless, skinless chicken breast 1 can (14.5oz) diced tomatoes, drained1 can (2.25 oz) sliced ripe olives, drained3 small zucchini, cut into 1/2 slices (2 cups)1 medium bell pepper (any color) sliced or diced (your preference)1/2 tsp ground cumin1/2 tsp ground cinnamon
1. In a 12-inch skillet, heat oil over medium heat. Cut chicken into cubes and season with your choice of seasoning, I use Cavender's Greek Seasoning. Add chicken to skillet and let cook for about 5 minutes, until brown.
2. In medium bowl, mix tomatoes, olives, zucchini, bell pepper, cumin, and cinnamon; pour over chicken in skillet.
3. Heat to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until chicken is fully cooked.
I served this over a small portion of brown rice (not included in nutritional value).
GREAT as leftovers!
