egg whites, zucchini & yellow squash, mushrooms, onions, bell peppers, garlic, basil, oregano, grated parmesan, fat free mozzarella shreds, and light tortilla wraps
Chop squash. Combine with canned mushroom pieces, frozen chopped onion & bell pepper and spices. Cook down in large non-stick skillet coated with olive oil spray. When most of liquid is gone, add parmesan & stir. Set aside. Scramble egg whites. Set aside. Add 1/4 cup fat-free mozzarella to each tortilla wrap. Add 1/4 of veggies and 1/4 of eggs to each wrap. Fold over and microwave for 30 seconds. It will drip, so keep a napkin close by and enjoy.
