Egg Omelet

Ingredients
2 eggs2 tbls diced green pepper2 tbls diced onion1/4 cup shredded Cheddar cheese loosely packed1 tbls Smart Balance buttery spreadSalt and pepper to tasteIf you have limited time, buy a small package of chopped green peppers and a package of chopped onions in your grocer's frozen section. It will last for months and cuts down on prep time considerably.
Directions
On medium high heat, heat a small skillet or omelet pan and melt 1/2 tbls of Smart Balance spread. Add diced peppers and onions and cook on medium until soft. Meanwhile beat 2 eggs with a fork or whist until just incorporated. Add to the skillet, the remaining 1/2 tbls of Smart Balance spread, then the eggs turning the pan gently to evenly distribute egg mixture. You can add a little salt and pepper. When egg has set and is not longer runny, sprinkle cheese on 1/3 of the omelet and fold over with the other half. Remove from heat and let sit for 2 minutes.

Substitute different seasonings, or add a dash of hot sauce.
