Karen's Veggie and Chicken Omelet

Ingredients
2 egg whites1/4 cup- sliced mushrooms1/4 cup- asparagus cut into bite size serving pieces1 cup- fresh spinach leaves1/4 cup- chopped onions2 oz. cooked grilled chicken, chopped into bite size pieces1 oz. feta cheese, crumbled 2 tbs Any homemade or commercial brand salsa (optional)PAM spray
Directions
In pan coated with PAM, saute asparagus and cook until firm but tender about 3 min. Add spinach, mushroom, onions, and chopped grilled chicken breast to asparagus and saute for 1-2 min more and remove from pan. Cook egg white in omelet pan coated with PAM until cooked. Add to omelet feta cheese, vegetables and chicken and fold over, remove from pan and serve with salsa. Enjoy!!
