Healthy Vegan Fajitas

Ingredients
1 medium onion sliced1 green bell pepper cut into strips6 small carrots sliced2 tomato sliced1/2 medium sweet potato cut into strips1 1/2 cup dry TVP (add water and soak)2 tbsp olive oil1 packet Ortega Taco Seasoning1 avocado mashed
Directions
-Soak TVP in small container (add water until it sits just above the dry TVP)
-Saute sweet potato and carrots in a large saucepan with 2 tbsp oil for 5 minutes
-Add TVP, onion, and bell pepper, continue to cook 5-10 minutes
-Add tomato and taco seasoning
-Stir and cook for about 1 more minute
-Serve on warm tortillas and top with avocado

*Tip: Have 1 full serving on a single tortilla and eat with a fork rather than loading on the extra carbs with multiple tortillas
