Dariy free chocolate mousse

*Ghirardelli Premium Baking Bar, 100%Cocoa, Unsweetened Chocolate, 339 gram(s) Vanilla Extract, .5 tbsp Almond Breeze Almond Milk, Unsweetened Original, 16 oz Mori-Nu, Tofu, silken, extra firm, 396 grams Sweetener of choice (I use stevia)
1. Put the chocolate, sugar and vanilla into blender.
2. Put the almond milk into sauce pan and set over med heat. Bring to a boil. Once milk is hot, pour over chocolate in blender and run on low. remove the lid from blender and add tofu cubes while blender is running on low.
3. Blend until homogeneous, scraping down sides as needed. add more milk until desired texture is achieved.
4. Pour mousse into individual dishes. wrap with plastic and refrigerate for at least 2 hours before serving.
