1 lb. boneless, skinless chicken breasts, cooked and diced1/2 c. walnut pieces, toasted and chopped1/2 c. olive oil mayonnaise1/2 c. red seedless grapes, quartered1/4 c. red onion, finely chopped1/4 cup celery, finely choppedSalt & pepper to taste (I used 1/2 & 1/4 tsp, respectively)
Mix all ingredients together and serve on a bed of mixed salad greens or in half a pita pocket.
Toss in a bit of curry, dill or other seasonings of your choice to change up the flavor profile!
