Crockpot Potato and Ham Soup

3-1/2 cups peeled, diced potatoes1/3 cup chopped celery1/3 cup finely chopped onion3/4 cup diced ham3-1/4 cups water6 chicken bullion cubes1/2 t. salt1 t. pepper5 T. flour5 T. butter2 cups skim milk2 carrots chopped (optional)
Stir all ingredients except milk, flour and butter into crockpot. Cook on low for 6-8 hours.
Approximately 20 minutes before serving, melt butter in a saucepan. Add flour and gradually add milk, stirring constantly over medium heat until thick. Stir mixture into crockpot and cook 15-20 minutes more.
For extra goodness, top with green onions and shredded cheese (not included in calories listed.)
