Vegan Banana Nut Muffins

2 large bananas overly ripe1 1/2 cup oat flour (easily made by blending oatmeal in a blender or food processor or even a blender: just blend until you have a fine powder)1/2 cup white flour4 oz walnuts1/4 cup packed brown sugar1/4 cup olive oil1 cup lite coconut milk1 tsp baking soda1 tsp cinnamon
Mix sugar and oil in a mixer or bowl. Add coconut milk and banana. Combine well. Seperately, in a different bowl or cup, combine the oat flour, white flour, cinnamon, and baking soda. Combine and stir until the batter just barely comes together. Add walnuts by hand.
Portion out into muffin cups or molds. Makes about 14 muffins or 1 loaf
Bake at 350 for about 20 min for muffins and 40 min for bread
Serving Size: 14 muffins or 14 slices of bread if made as a loaf
