Fried Rice

Ingredients
3 cups cooked brown rice - must be cooled so the starches harden3 eggs1 tbsp olive oil3 tbsp soy sauce (low sodium)
Directions
makes 6 1/2-cup servings

Heat oil in wok over medium high heat. Add eggs and scramble. When the eggs are almost finished, add the rice, and stir fry for about 5 minutes, or until rice is warmed through.
Add soy sauce and stir-fry another minute or two.
