Directions
Zucchini, baby, 6 medium sliced into 6 sticks eachMilk, nonfat, .25 cup *Whole Wheat Flour, 0.5 cup *Progresso Bread Crumbs - Italian Style, 0.5 cup Bread crumbs, dry, grated, plain, .25 cup western family parmesan cheese, 4 tbsp4 egg whites
In a medium bowl put the flour. In a second bowl combine the egg white with the milk. In a third mix the bread crumbs with the parmesan cheese.
Have a large cookie sheet prepared and sprayed, and oven preheated to 450.
In assembly line fashion, dip the zucchini into the flour, making sure it's totally covered but not leaving anything behind. Then dip into the egg mixture and then into the bread crumb mixture, making sure it's evenly covered. Place on cookie sheet. It doesn't matter if they touch.
cook for 11 minutes, making sure they are golden brown. Let cool enough to pickup, and serve with marinara or choice of dipping sauce. We eat them plain!
