Cucumber Salad

Ingredients
1 medium-large cucumber (peeled)1 medium onion (vidalia is best)1 large tomatoe1/2 cup Cidar vinegar (=8TBSP5 tsp splenda(add water to taste) Will weaken acidity.
Directions
Mix the cidar vinegar and splenda (if you prefer more of a "bite" or pickled effect increase the vinegar and adjust Splenda to your liking... Can add water to "weaken" the acidity.

Peel the cucumber and slice
Peal the onion then quarter and slice
Remove the stem from the tomatoe and dice
Add Veggies to the vinegar mixture and marinate for at least 2 hours. (I prefer 6-12 for a stronger flavor.)

I also like to add herbs such as basil or oregano at times. This pairs nicely with a serving of cottage cheese as well!
