Tofu Scramble

Ingredients
Onions, raw, 0.5 cup, chopped Celery, raw, 0.5 cup, dicedTofu, firm, 1 blockSpinach, frozen, 1 package (10 oz) yieldEgg, fresh, 6 largeColby and Monterey Jack Cheese shredded, 0.75 cup Red Ripe Tomatoes, 2 Italian tomato 2 tsp olive oil
Directions
Chop all vegs, tofu, prescramble eggs. Preheat oil in medium skillet. Add onion and celery, saute 5-7 min, add tofu, spinach, salt to taste and continue to cook stirring occasionally until liquid is removed. Add tomatoes and eggs, and turn frequently until eggs are cooked through. Sprinkl cheese on top and remove from heat. Allow cheese to melt, and divide into 6 servings.
