Banana Oatmeal Cinnamon Swirl Bread

Ingredients
1 C. whole wheat flour2 1/2 C. white flour3/4 C. oatmeal1 pkg. dry yeast1 t. salt2/3 C. nonfat milk1/4 C. butter1/3 C. brown sugar1 mashed banana1 egg beaten
Directions
In a large bowl, mix 1 C. flour, oatmeal, dry yeast and salt. Heat milk, sugar and butter to 125 degrees. Add gradually to dry ingredients. Beat at medium speed 2 minutes. Add banana and egg. Beat 2 minutes. Stir in flour until dough is stiff. Knead on floured board 8 - 10 minutes. Put in greased bowl, turning to grease dough. Let rise 1 to 1 and a half hours or until double in size. Punch down. Let set 10 minutes.

Roll on floured board to size of 15x9 inches. Brush with water. Mix together cinnamon and sugar. Sprinkle on top. Roll up jelly-roll style, starting with a short side; pinch seams to seal.

Place loaf seam side down in greased 9x5 inch pan. Cover and let rise in warm place until doubled, about30-40 minutes. Bake at 350 degrees for 25-35 minutes or until golden brown. Cover loosely with foil if bread browns to quickly. Remove from pan to cool on wire rack. Yield: 1 loaf.

    This recipe is excellent! Thanks so much for sharing. In order to make it non- dairy I used unsweetened soy milk and canola oil (instead of milk and butter). I also used only whole wheat flour. It came out beautiful and delicious. A recipe the whole family loved, a definite repeat. - 11/6/15
