Baked Oatmeal with Chickpeas

2 Cups Oats2 Cups Rice Milk1/2 tsp Vanilla Extract1/2 Cup Golden Raisins1/2 Cup Chickpeas (Garbanzo Beans) drained/rinsed1 Peeled & Grated Apple4 Tbsp Maple Syrup
Preheat oven to 400.
Coat a 3 quart casserole dish with cooking spray.
Combine all ingredients in a large bowl.
(If you are preparing this dish the night before don't add the liquid ingredients and apple until morning.)
Place mixture in dish. Bake uncovered for 45 minutes.
Serving Size: Makes 6 1-Cup Servings
