avgolemono soup

Ingredients
2 quarts chicken brothchicken meat from breast and thigh4 -5 eggs1 cup orzojuice 2 lemons, zest of one lemon
Directions
prepare broth from carcass or use ready made. pick meat off of bones or use left over chicken.
add 1 cup of orzo to broth and simmer for 30 min. beat eggs in bowl with mixer, adding ladle fulls of hot broth---should get light and foamy. beat lemon juice and zest into egg broth mixture. finally stir the egg broth lemon mixture into the pot with remaining broth and orzo. Allow it to sit for 20 min or so to thicken.
Add salt as necessary. If eggs are small use extra.
