Mexican Fried Rice

Ingredients
1 can of Goya Black Beans 1 cup chopped raw Onions, raw, 1 medium (1 cup chopped) 1 clove Garlic (1 tbsp. chopped fine)1 cup uncooked short or long grain Brown Rice3 celery stalks (chopped) 1 1/4 cup Tomatoes, red, ripe, canned, with green chilies, (one can of rotel chili fixins' is what I used)1 tsp. Salt1 tsp Cumin1/4 tsp to a dash of Chili PowderTo Taste: Tabasco sauce (I like the Chipolte)
Directions
In 2 quart pot: Spray lightly with canola oil spray so your rice won't stick to the pot. Add two cups of water and 1 cup brown rice with 1tsp. salt. Cook on medium high heat for 20 minutes or until al denté. While rice is cooking, spray wok with canola spray and sauté celery, onion and garlic in on medium heat until onion is clear and celery has a soft crunch. Rinse beans in a colander, then add beans and tomatoes to the wok. When rice is done, add to wok. Serve hot with hot sauce!
About 5 servings, 1 cup each and will certainly fill you up!
