Chicken Madras

Ingredients
1 tbsp canola oil2 tbsp Patak's Madras Curry Paste1 lb boneless skinless chicken breast cubed1 medium yellow onion, cubed3/4 c water2 tbsp unsweetened coconut milk
Directions
In large skillet warm oil over medium heat. Add onion and cook until fragrant..about 5 minutes. Add chicken breast, stirring to brown on all sides. Stir in curry paste. Cook one minute. Add water bring to a boil. Reduce heat and simmer uncovered until chicken is cooked through, Stir in coconut milk. Serve immediately
