Lactation cookies for Breastfeeding moms

Ingredients
1 Cup margarine1 Cup sugar1 Cup brown sugar4 Tbsp water2 Tbsp flaxseed meal*2 large eggs1 tsp vanilla2 cups flour (wheat used in calculating nutrition info)1 tsp baking soda1 tsp salt3 Cups oats (thick cut if you can find them)2 generous Tbsp brewer's yeast**Optional:1 Cup chocolate chips, raisins, etc. (NOT included in nutrition info)*Can be found at any health food store.**It MUST be brewer's yeast!
Directions
Preheat oven at 375 degrees F. Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) margarine and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Sift together dry ingredients, except oats and chocolate chips (if using). Add to margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.

Bake 8-12 minutes, depending on size of cookies.

    Although these may help with lactation, the best solution is to breastfeed/pump more frequently. Just an FYI from my daughter who is a nurse specializing in that particular area. - 8/10/09

    I was wondering the same thing. I am a nurse and a breastfeeding consultant. I do not see any ingredient that is known to really boost the milk supply. I am always looking for new information! - 9/9/10

    I made them with chocolate chips this first time. Next I'm going to try raisins. Too early to tell if my supply has been boosted. Either way I've found a new yummy sweet treat I don't feel too guilty about having :) - 2/24/09
