Lamb Madras

Ingredients
500g roast lamb leftover1 onion chopped2 cloves garlic (optional)Celery - 1 stalk - dicedCarrots - 1 medium - dicedPotatoes - 1 medium diced1 cup mushrooms1 aubergine1 tin of passata or chopped tomatoes2 tbsp of Pataks Madras Curry Paste1 cup of waterSpray low calorie oil
Directions
Spray pan with oil. Add diced onions, garlic, carrots and celery. After about 5 minutes add diced potato, mushrooms and aubergine. Stir in curry paste. Add tomatoes and water. After 10 minutes add diced lamb. Cook for a further 20 minutes. Serve with rice or couscous.
