    Sweet potato, 1 cup, cubes

Directions

Dice the potatoes (sweet and regular) into bite-sized chunks (not too small or the flavour goes), put in large bowl, add a small amount of water and cook in microwave for 15 to 20 minutes on high.

Dice the beef into bite-sized pieces. Chop up the veggies into bite sized pieces.

Heat up the olive oil in a pot on the stove. Brown the diced onion, garlic, ginger and then add diced beef to seal.

Add chopped vegies (broccoli, green peppers) and give them a bit of a brown too.

Add canned tomatoes and water and stir through.

Add spices.

When cooked, drain the potatoes in a colander and then add the potatoes to the curry pot.

Bring to boil, and then simmer on low-heat for at least half-an-hour.

Serve with basmati rice.
