Vegetarian Chili

Ingredients
2 tsp Olive Oil1 ea Onion, chopped1 ea Red Bell Pepper, chopped¾ can Black Beans, drained & rinsed¾ can Diced Tomatoes, with juice¾ can Vegetable Broth2 tsp Chili Powder1 tsp Ground Cumin1 tsp Dried Oregano¼ cup Cheddar Cheese¼ cup Sour Cream
Directions
1. Heat the oil in a Dutch oven over med-high heat. Add the onion and bell peppers. Cook, stirring frequently, for 3 minutes.

2. Add the beans and next 5 ingredients and simmer for 20 minutes.

3. Divide into 6 bowls, sprinkle evenly with cheese and dollop of sour cream.
