Hearty Beef & Barley Soup

Ingredients
3/4 c. dry barley1 T. oil1 1/2 lb. beef chuck, 1" cubes1 med. onion1 clove garlic, minced9 c. water3 beef bouillon cubes1 T. Worcestershire sauce1 t. basil1 1/2 t. salt1 bay leaf1 8 oz. can tomatoes3 ribs celery, sliced2 large carrots, sliced1 1/2 c. green beans3 potatoes, diced1/2 t. tabasco sauce
Directions
In large stock pot, heat oil and brown meat with onions and garlic. Add barley, water, bouillon cubes, Worcestershire, basil, salt and bay leaf. Cover and simmer 1 1/2 hours. Add tomatoes, vegetables and tabasco sauce. Cover and simmer 1/2 hour longer. Makes about 12 servings. Even better the next day!

    This is scrumptious!!! I made a couple of modifications - added an additional 1/2 cup of barley (which made it more stew than soup-like), threw in some leftover peas and carrots, omitted the green beans, used a 14.5 oz. can of diced tomatoes (that was all I had) and used beef stock. A keeper!!! - 11/14/09

    Yes, this is a great recipe. I also substituted turnip for the potatoes, and added mushrooms, and tomato paste. I also doubled up the Worcestershire sauce. Loved it. - 11/4/09

    Delicious--needed a little more piquantness for me so I added a small can of tomato paste and one more Tbsp of Worchestershire sauce. It just got better the next day--hubby loved it. - 11/25/08

    This is a great recipe. I substituted a cubed turnip for the potatoes - even people who think they don't like turnips like them in soup. They look just like potatoes but add a nice flavor with less calories. - 11/24/07
