Lindt Chocolate Mud cake

200g Lindt chocolate 70%250g unsalted butter1 1/2 cups black coffee2 cups of caster sugar1 1/2 cups self-raising flour1/4 cup cocoa2 eggs2 teaspoons of vanillaFor icing100g Lindt chocolate 50% or 70% (I use Greens Mayan dark chocolate for frosting as it adds a nice orange twist)100g butter
Melt butter in a pan, stir in coffee then chocolate and sugar. Do not let it boil. Once combined allow to cool slightly and transfer into your mixing bowl.
Sift flour and cocoa and stir into the chocolate mixture in 3 batches. Once beaten in add eggs one at a time and then vanilla. Beat well.
Pour into a greased and lined 20cm springform cake tin. Bake in a slow oven for 1 1/2 hours. Let cool.
Melt icing chocolate and butter. Once melted allow to cool to room temperature and then then beat with a wooden spoon until thick and spreadable.
