Vegetable Korma

Ingredients
garlic clovesginger rootolive oiltomato sauce, yellow or green bell pepperbasilcarrotspotatoescurry powderpeas coconut milkServe hot over rice (1 cup dry total) or naan (not included in calories)
Directions
Saute garlic and ginger root in oil
Add to slow cooker, add tomato sauce, pepper, basil, carrots and potatoes. Season with curry powder. Cook 5 hours on low.
Add peas and coconut milk. Cook 10 minutes
Serve hot over rice or naan
