8 cups or 2 boxes reduced sodium beef broth1 lb lean ground beef1 medium or large onion (chopped)2 cups carrots (diced)2 cans green beans (no salt added preferred)2 cans corn (no salt added preferred)1 can black beans (rinsed)1 can kidney beans (rinsed)4 medium potatoes diced
You will need at least a 5 quart pan or dutch over for this recipe or will need to split it between 2 pans.
Brown ground beef and drain off any excess fat. Add diced carrots, onions, and potatos and saute for a few minutes until onions are clear in color. Add beef broth and diced tomatoes undrained. Add green beans, corn, black beans, and kidney beans, draining and rinsing reduce sodium.
Cook on medium heat until potatos and carrots are tender, stirring often.
Serving Size: makes around 8 1 cup servings
