Crustless Veggie Quiche

Ingredients
Onion - Red/Purple - 1/4 Cup, 4 serving 1/2 cup Fresh Broccoli, 2 serving chopped garlic, 6 tsp Fresh Tomato (Chopped or Sliced) (180g), .25 cup Spinach, fresh, 10 leaf Egg, fresh, 4 large Milk, 1%, 1.33 cup Flour, white, .5 cup Baking Powder, .5 tsp Kosher Salt, .25 tsp Feta Cheese, .5 cup, crumbled Cayenne Pepper, .125 tsp
Directions
Preheat oven to 400 degrees and grease 9-10 inch pie plate. Saute all veggies except spinach in a pan sprayed with cooking spray until onions are translucent. Add spinach at the very end, just until slightly wilted. Remove veggies from pan and place in bottom of pie plate. Top with feta. Beat eggs, milk, flour, baking powder, salt, and cayenne pepper until well combined (there will be a few lumps from the flour). Pour over veggie/cheese mixture in pie pan. Bake at 400 degrees for 35 minutes, or until center is solidified.
