2 cups multi grain oatmeal4 oz eggbeaters or egg whites2 tbsp vanilla extract8 teaspoons splenda3 tablespoons cinnamon2 cups of chopped peeled apples3 cups of boiling water.
mix all but apples in bowl stir well
let set for 10 mins. so oatmeal absorbs some liquid
add in chopped apples chop finely to assure full baking. use non stick spray on muffin tins.
bake in 350 preheated oven between 35 and 45 mins til they are almost rubbery to touch.
makes 4 huge muffins and that is 2 servings. great pre - work out meal.
