Ingredients
1 med. potato shreddedabout 1" slice of sausage, crumbled6 eggs, beaten2 oz cheddar cheese, cubed
Directions
crumble sausage in a frying pan, begin cooking, shred potato add to sausage, cook for a couple minutes (don't cook completely in frying pan). Add to small cake pan or even muffin pan. Add eggs and cheese. Bake in a 350 degree oven til eggs are set and potatoes are done.

I cooked mine in a toaster oven worked out very well.
