Bourbon Chicken

1 ½ lbs. boneless chicken breasts, cut into bite sized pieces1 tablespoon cornstarch mixed with ¼ tsp. salt2 minced garlic cloves1/4 cup orange juice concentrate½ cup water¼ cup soy sauce1 tblsp. apple cider vinegar1-3 tablespoons minced ginger (to taste)½ tsp. crushed red pepper flakes (more or less to taste)¼ cup brown sugar, loosely packed1 tblsp. ketchup2 tablespoons bourbon (or dark rum)
1. Spray a large skillet with EVOO spray. add chicken and garlic and begin to cook. cook until chicken is white all over, about 5 minutes.
2. Meanwhile in a small bowl, mix together cornstarch, salt and 2T water. Set aside.
3. When chicken is partially cooked, add remaining ingredients. Bring to a boil, then reduce to a simmer. Simmer uncovered for 10 - 15 minutes, or until chicken is tender and sauce is reduced by half. Stir cornstarch mixture well, then add to skillet. Cook and stir for 1 minute, or untill thickened.
Serving Size: Makes 6 1/2 cup servings
