Fluffy Rhubarb Jello

Ingredients
3 oz. pkg. strawberry jello, sugar free1 oz. pkg. instant vanilla pudding, sugar free2 c. warm water3 c. rhubarb, diced4 oz. lite whipped topping
Directions
Cook rhubarb (either in microwave - I have a vegetable setting - or on stovetop, low heat, until soft). Cool. Meanwhile, dissolve pudding and jello in water. Boil in microwave for 2 minutes, remove, and let cool in frig. Combine rhubarb, jello mixture, and cool whip. I let it set in frig. for about 1 hour before serving. You could top with fresh sliced strawberries prior to serving. Enjoy!
I have also made this recipe with orange jello and mandarin oranges, or strawberries with the strawberry jello.
