Baked Brown Rice Pudding

5 cups cooked brown rice1 quart vanilla almond breeze unsweetened1/2 cup brown sugar splenda1/2 cup sugar1/2 cup unpacked raisins1 tblsp ground cinnamon2 tblsp margarine
cook the brown rice. cool rice to room temperature. Preheat oven to 325.
In a large casserole place all ingredients except margarine and ground cinnamon and gently mix to distribute rice evenly. Place margarine in dots around the top of the pudding. Sprinkle with cinnamon. Place casserole on a cookie sheet which can hold water. Place in oven and put water onto the the cookie sheet so that it surrounds the casserole containing the pudding. Bake slowly for 3 hours at 325 until a knife inserted into the pudding comes out clean. Serve the pudding warm or cold.
