Banana Nut Cake

2 Tbsps Baker's Yeast2 Tbsps Honey1/2 Cup Warm water4 Very Ripe Bananas1 Tbsp Real Vanilla Extract1/3 Cup Honey1/3 Cup Vegetable Oil1/3 Cup Soy Milk1 1/2 Cups Whole Wheat Flour1 TSP Sea Salt1 Cup Raisins1 Cup Walnuts, chopped
Preheat oven to 375 degrees F.
Combine first 3 ingredients in a small bowl. Whisk and allow yeast to rise.
In a large bowl, combine next 5 ingredients. Add yeast mixture and flour, mixing slightly. Add sea salt, raisins, and walnuts. Mix only until combined.
Pour cake mixture into a greased 9" round cake pan and let rise for 10-15 minutes. Bake at 375 degrees F for 15 minutes, then reduce oven to 325 degrees F and continue baking for 30 - 40 minutes until golden brown and a toothpick comes out clean. Cool before transferring cake from pan.
