Easy Bran Muffins

Ingredients
1 15 oz box of Bran Flakes( I use cheap kind at Aldis)2 C. sugar (I use stevia or splenda)2 tsp salt1 C. oil ( I used Olive oil)5 Cups Flour ( I used 1 C. Soy flour, 4 Cups Whole wheat)4 Beaten eggs ( I used egg substitute)1 qt. lowfat Buttermilk
Directions
IN a bowl mix all dry ingreadients. Beatr eggs and oil, and buttermilk. Add liquid Mixture to dry mixture. Grease muffin tins bake at 3:75 for 25 minutes or until done with touch of finger sponges back.. Batter will keep up to 6 weeks in fridge

Serving Size: not sure makes a big batch freezes well. guess is 30 muffins
