Lori's Sugar Free whole wheat Blueberry Muffins

Ingredients

1 cup whole wheat flour1/6 cup splenda for baking or pourable sucralose1 tsp. baking powder1/8 tsp salt1 egg, beaten1/4 cup cream1/4 cup water1/8 cup olive oil3/4 cup fresh blueberries
Preheat toaster oven to 350 degrees Fahrenheit and grease a six cup muffin tin. In a small bowl combine flour, splenda, baking powder, salt. In another small bowl combine all wet ingredients except blueberries. Add wet to dry to gently combine [do not overmix] batter will be lumpy. Gently add blueberries. Spoon into greased muffin cups.
Add wet ingredients (include the flax mixture here) to dry and stir just until incorporated.
Bake about 20 min. at 350.
muffins will be rustic but yummy. best eaten with topping of your choice; mine is a couple spoons of yogurt on top :)
