Shirataki Chicken Noodle Casserole

Ingredients
8oz bag of tofu shirataki noodles (see prep instructions)100g Tyson Premium Chunk White Chicken in water, drained1 can Campbell's Healthy Request Cream of Chicken Condensed Soup1/4 cup shredded Fat Free cheddar or mozzarella cheese1oz reduced fat cheddar cheese, shredded1 cup frozen mixed veggiesTopping: 4 Keebler Multigrain Club crackers, crumbled
Directions
RINSE shiratake noodles thoroughly to eliminate their natural odor (smells a little like fish). I even boil mine for a few minutes first!

Combine all ingredients until well blended. Bake covered with foil in one or two small casserole dishes at 375 for 20 minutes until bubbling. Removed cover, sprinkle with cracker crumbs, and brown in the oven.

Let stand for a couple minutes and serve!

I did not measure the serving size, but I estimate it makes 2 approximately 1 3/4 cup servings...which is plenty!!!
