Low Fat Pumpkin Bread

Ingredients
2 c. canned pumpkin1/4 c. brown sugar3/4 c. Splenda1 lg. apple, peeled, finely chopped10 dried prunes2/3 c. orange juice1 tsp. orange zest2 eggs2 egg whites2 c. whole wheat flour1 1/2 c. all-purpose flour2 tsp. baking soda1 1/2 tsp. nutmeg1/2 tsp. ginger1 1/2 tsp. cinnamon
Directions
Puree the apple and prunes together in a blender, along with a tablespoon or two of the orange juice to make it easier. Mix all the wet ingredients well. Mix the dry ingredients, and add to wet mixture. Blend well. Pour batter into two loaf pans, which have been sprayed with canola oil spray. Bake at 350 for about 40 minutes, or until toothpick inserted in center comes out clean.
